Matt Preston's Best-Ever Spaghetti Bolognese

Spaghetti Bolognese (when done right) is one of the best midweek staples - and Kayla happens to think mine is better than Stephen's! i used to follow a recipe that contained milk - odd I know, but it does result in a rather silky texture - but this one has become my favourite since I discovered it earlier this year! AND there are leftovers to freeze for a second meal, which makes my heart very happy!

Chicken Normandy

As you know, I am a terrible cook (but a magnificent baker) so when I saw this recipe for Chicken Normandy in Food & Home Entertaining (May 2012) I was surprised at how tempted I was to make it. To be fair, I was a little "homesick" after a wonderful 2 weeks in France last year, one of which was in Normandy, hence how quick I was to give this a try.

White Chocolate and Walnut Cookies

My friend Allison gave me one of my favourite-ever cookbooks – The Golden Book of Cookies – which makes me happy just looking at the pictures! And the best part is that every single recipe works, and works brilliantly. That being said, these White Chocolate and Walnut Cookies are my absolute best, especially as I can get Kayla to roll them into balls for me while I lick the bowl before she can get her grubby little paws on it.

I am a hopeless cook, which is rather sad seeing as though I simply adore TV cooking shows and recipe books. I just can’t handle all the chopping, frying, stirring and cleaning up afterwards – it is too exhausting for words. But all that changes when it comes to baking – I LOVE baking with every fibre of my increasingly chubby being.

Pasta with Sun-Dried Tomatoes

I may not be a very good cook, but I am an excellent “compiler of stuff”. I first saw the Barefoot Contessa making this Pasta Salad on her show a few years ago and have been making it religiously ever since. It tastes even better the next day (if I can get to it fast enough before it mysteriously disappears).  It also makes a fabulous lunch when served with fresh crusty bread.

Fat-free Chocolate Brownies

Before Stephen and I got married, I lived in a gorgeous garden cottage in Parktown North – set back amongst the trees and boasting the most beautiful wooden floors and pressed ceilings I had ever seen. I loved that house almost as much as I loved Marion and Harold, my two landlords. Harold (then in his late 70’s) followed a very strict low-cholesterol diet, which necessitated some intense research into how we could all indulge his sweet tooth without sending him into cardiac arrest – and when I stumbled across this recipe for Fat-Free Chocolate Brownies, I knew I was on to a winner.
